Grapes are harvested at night in organic wineries to ensure a stable level of sugar in the grapes, which results in a reduced ABV wine. The blossoms have been undergoing classic reddish fermentation in steel tanks before ageing in French oak for 2 years, with a further one year in the container. The wine incorporates the primary aromas of blackcurrant and blackberry, and as the wine opens in the bottle, you can find the secondary and tertiary aromas of damson, walnut and cocoa. To try, the wine is mild with a palate of dark fruit, followed by a few sweet spices, oak and a hint of earthy truffle. The wine has mild tannins and combines well with roasted red meats, pasta with ample tomato sauces or soft and hard cheeses.
